Pandan, kaya, laksa, and even Milo Gao—these aren’t just pantry staples anymore. For SG60, bartenders are turning Singapore’s iconic flavours into cocktails that’ll make you see (and sip) nostalgia differently.

At this waterfront gem, enjoy a set of three limited-edition cocktails ($60++) where familiar ingredients take centrestage. The Pandan Negroni isn’t just a cocktail – it’s an aromatic love letter to Singapore’s favorite herb, with house-infused pandan gin dancing with Campari and pandan syrup.

For those preferring non-alcoholic options, the SG Swizzle Mocktail ($14++) offers a refreshing fusion of pandan, coconut and dragonfruit.

For the ultimate elevated experience, pair your drinks with the ‘Let’s Go Local Platter’ ($78++) featuring chilli crab-dressed soft-shell crab with mantou, crispy pork crackling and other local delights.

Birds of A Feather
This modern Sichuan eatery serves breakfast in a glass: the Loti Kaya Cocktail ($25++) is a boozy tribute to kaya toast, with gin fat-washed in kaya, soy milk, and gula melaka. Served with actual toast for dipping into the housemade alcoholic kaya topped with an edible print of the Singapore flag, it’s a full sensory ode to Singapore’s traditional breakfast culture.

Amidst these inventive sips, one ingredient shines – gula melaka. Deeply rooted in Peranakan and Malay cuisine, this smoky palm sugar is a pantry staple in Singaporean desserts, loved for its rich aroma and caramel-like complexity. From the abovementioned Birds of A Feather’s Loti Kaya Cocktail ($25++) to Monti’s Kopi C Martini, bartenders are giving it the spotlight it deserves.
